The other thing that has occured to me is that one way to reduce moisture build-up would be to trim the glass/plastic covers back a bit so evaporating moisture can escape out the top, rather than accumulate enough to fog the glass/plastic. I haven't tried it yet, but I wonder it trimming 3/8 inch from the tops of both panes might not make a difference. There isn't really a reason for them to meet at the top the way they do, unless you are pretty close to the equator.
