STELLA is the celnav software written for and used on US government ships. From what I gather, it was basically written with automated star trackers in mind and can do some tricks with near-continuous input like determine course and speed. For sporradic sextant sights made with human eyes it's overkill and doesn't improve results over paper and pencil, but processor cycles are cheap and the software has already been paid for.
The algorithms were spelled out in papers hosted on the USNO website, back in the Before Times.
