The International Astronomical Union has beaten us to it. Wikipaedia gives a comprehensive table of named stars, together with the origins of the names and agreed pronunciations in the English language, using the international phonetic alphabet. Examples of the latter can usually be found in most modern dictionaries. In the end, though, it is usage that decides, perhaps why in some areas of the USA, Adolph is pronounced with a long "a", as in "gate".
