Your understanding is correct. Unfortunately I don't know of a source for stereographic charts. It would however be reasonably straightforward to produce one and have it printed at a commercial print centre in large format. In fact it wouldn't even need to be a chart but just a stereographic grid or plotting sheet.
I have only really thought through the use of this graphical technique for double altitude sights althought a similar approach may work in other cases. It is hard to see how it could be used for clearing lunar distances. There I think you would probably end up having to measure the arc length of a circle which would not be feasible with the required accuracy,
