Tony, there are at least two good reasons for not having a mercury horizon in an aircraft:
1) Vibrations would disturb the reflective surface and the mercury would be subject to the same accelerations as a bubble level;
2) If spilled, the mercury would corrode metal components of the aircraft, quite speedily in the case of aluminium.
