I had built something similar to this many decades ago using a round first surface mirror of 6" diameter on a substantial piece of glass - memory is fading but I think it was 3/8" or 1/2" thickness to the glass. I put it on a piece of triangular plywood with a leveling screw in the corners. I used a fairly good bullseye bubble level on it but it was insufficiently accurate for the purpose and my accuracy was a bit indifferent.
On the plus side, it did allow me to shoot stars.
Given the relative effort, I'm very much a fan of having the bubble inside the sextant.
