Hi David,
Recently when I was building the Stirling engine, I asked myself exactly the same question! The accuracy of modern milling/laser cut is unprecedented so would it be possible to produce a sextant as a building kit?
The push out laser cut models - is Ukrainian startup U-GEARS (https://ugearsmodels.us/about-us/). Last year I built one with my son (see attached photos). It is really amazing!
