Almost anything will work.
My first try with a Davis sextant was a block of furniture foam and an electric knife. It looked like I sewed it up with a grapevine but it still works after 20 years.
It might be cheaper, and surely more simple, to buy a new plastic case from Harbor Freight with foam that’s already almost cut through. You just pull out the foam cubes that will make a fitted hole for your sextant.
The precut foam might be available on its own.
