log sin 41° = -0.18306 = -0.18306 + 10 - 10 = 9.81694 - 10
In order to avoid substraction, it is (was) common to add 10 to negative logs (and sometimes to positive logs as well). Thus your table shows log sin 41° as 9.81694.
