Tony, I agree that guy in the video does go the long way on some of that stuff. I have never used google earth for my plotting. I pre-plan my sights using HO249, use the in game sextant to shoot the stars for Hs. Then reduce and plot on paper and transfer the fix to a sectional chart just as you would in real life. You do, as you stated, still have to point the sextant down the azimuth you need and then center the bubble and record your Hs/Ho. There is also a driftmeter that you can use with the sextant. I'll be honest I've never mastered that driftmeter but it is in there.
