Bubble sextants were IMHO mostly used in aircraft, where at any altitude you have more of an issue with freezing than with baking. Also, using them in a dark aircraft through the astrodome (a perspex bubble), anything white will reflect badly on the inside of the perspex so as to make the use more difficult than having it all black.
Seems to make a whole lot of sense to me...
