I haven't read every entry in this thread so forgive me if this is out of place.
I have never used a bubble sextant for pratice sights but I have taken >2000 observations between 7/2011 and 7/2012, all with a mirror artifical horizon. (Oh no, not this guy again.) Any time of the day or night, any wind conditions, I have been able to practice to my heart's content. Earlier this year I did the math on 90 consecutive sights of sun, moon stars and planets and the largest intercept was 4.7 miles a a few were 0.0 miles. The average was less than 1.5 miles. (Based on GPS assumed position and using the USNO sight reducyion page.) If you want to practice sextant sights I yet to hear of any better option.
