Jeremy, your last reminded me of the docks at a yard I once managed in Mamaroneck NY. They happened to be aligned such that when a boat was tied up to one or the other it was headed within two degrees of magnetic N, S, E, or W. Once the weeks' boats were in the water, I'd go from boat to boat and and could quickly see which compasses were obviously out of whack.

We use azimuths (primarily from the sun or Polaris) or we use ranges, or we use the Franklin technique to determine gyro error.
One way that is not on my approved method list, but is in common practice is to take the heading of the ship at a pier and comparing it to a line parallel to the dock. This can be off several degrees but is an easy way out.
