Peter,
In physical therapy we use a foam pad to remove proprioceptive feedback from the feet and legs as part of balance testing. You could do your sights standing on a foam pad but you should be very careful to avoid falling. I would try it without an instument in my hand first. You will be losing two components of balance, both proprioception through the ground and the visual reference as well. It would be a shame to break a sextant.
