UTM question

I've been getting up to speed on the UTM grid
system, and have a question that I haven't been able to find an answer to: Since
the northings are based relative to the equator, why do we need more than 2
northing zones (1 north and 1 south) for the non-polar regions?
Since the eastings are based relative to a
central meridian in a given zone, it makes sense that we'd need multiple ones of
those to cover the entire globe - but the only reason I can see for having
multiple north/south grid zone boundaries is as a "convenience" to make it
easier localize an area to a given part of the world (?). Does anyone have a
definitive answer to that one?
