Lars,
Using cardinal headings by gyro then adjusting the magnetic compass to the correct heading with magnets (allowing for variation) is a bit of a short cut. Most of the deviation will be taken out unless variation is large. Figuring what the gyro should read for the magnetic cardinal heading is the more correct way as you say and is explained in pub. 226.
