The LOP plots perpendicular to the azmuth.
In this case I believe "beam sight" is akin to the nautical term "abeam" meaning diriectly to your side. If you take a sight with an azimuth "abeam" you will get an LOP aligned with your direction of travel. In other words a "course line." Sights directly ahead or astern result in "speed lines"
