    Benjamin,

    In practice at sea there generally isn't a problem knowing which pole to work off of with the Z value. If there are doubts then use a hand bearing compass, PV formula, or Weem's Line of Position graph (attached).

    Prime Vertical (PV) =  Arc Sin { Sin Declination / Sin Latitude 

    The prime vertical is the altitude of a body when bearing 90°° or 270°.
