I think the author of the animation was trying to show the two paths, but made an entire muck of it. What's the sense of showing the index path moving upwards, parallel to the horizon path. Not much use for a sextant that does that.

I've had the 'pleasure' of directing riggers moving these surface plates. 2000 pounds, typical. We had a very special tiny lens once that fell into one of the many tapped holes. The riggers came back, turned the table upside down and out it fell, none the worse for the wear.
Sextant alignment- yes_ I'll be doing just what you suggested.
