You can edit PostScript in applications as simple as notepad, although it's easier in wordpad because of the formatting. I believe both are included with just about every version of Windows. Personally, I use a program called Notepad++.
For viewing/printing the product, I use a plugin for Adobe reader by Rampant Logic called (appropriately) PostScript Viewer.
