On a ship at sea we do that several times a day. Azimuth of stars, including polaris; azimuth of the sun, as well as amplitude of the sun are all done on a regular basis. In fact it is the only regular celnav done on merchant ships these days as there is no other way to check the compass at sea.
My compass reads in whole degrees and we interpolate to the tenths place. A ship is usually stable enough to do so and is quite accurate when done correctly.
