You can certainly shoot throughout the night if you are using an artificial horizon. However, I have found that the full-horizon mirror of the Davis 25 blocks out the light of most stars other than Sirius. It will work well with sun/moon/planets.
Once you start getting into star shots, you may find the Davis 15, with the traditional split mirror, works better.
I have a Tamaya aluminum sextant that came with a whole-horizon mirror. Once I started pursuing star sights, I replaced the whole-horizon with a split-mirror.
If you can see a star at all, you will be able to see it in a split mirror.
I would like to try out midnight shots on a natural horizon. I saw somebody in this group talked about German navigators wearing red goggles for an hour before going on deck to take sights. So I purchased one of these to experiment with:

It was cheap. So if it doesn't work out for me, I can always wear it to costume parties.
