Sure. Why not?! But the minimal edit capability on that particular device (as you say, "not possible to erase the screen just partially") is a weakness. Why not just carry an Android tablet with a stylus if you're feel like going that route? Or, my preference, an iPad with an Apple Pencil (which is leagues better than an Android implementation that I have seen). This can satisfy your desire to write and take notes manually while providing a permanent digital copy of your work, and it's a supercomputer, too. It's very true that this could break. So you have plainPad and plainPencil as backup. They still work.
When practicing and experimenting on dry land, it's nice to have some means of recording your work for later review and contemplation and to share with other navigators. Ideally we would have video recording of the view through the sextant, audio recording of the navigator's declarations (e.g. "mark!") and impressions (e.g. "I don't like that sight"), and simultaneous video recording of the arc and micrometer drum, all time-coded to the nearest tenth of a second of UT and accompanied by GPS fix data. All of this is possible today. So get on it! :)
