How Did Captain Cook Chart St Laurence and the Pacific

Among other navigators who originally charted North America, Captain Cook charted St Laurence River/Bay before 1759. That was about 8 years before the Nautical Almanac was available and before an accurate chronometer.
How or what did he use to establish his benchmarks for his Latitudes and Longitudes? Did he also use Land Survey techniques to chart the Hazards along the River?
And then after the Nautical Almanac was available, during his Pacific Voyages, he created a lot of the charts. His voyages took multiple years. If he used the Nautical Almanac, how did he get the yearly editions?
