Don't know if this is widely known or not, being a newbie, but stumbled on
an RAF Mark IX bubble sextant simulator written for use with Microsoft
Flight Simulator.  Looks like the real thing and apparently allows you to
take shots out the cockpit window of the aircraft you're flying.

and scroll down about a third of the way down the page.  You'll see a
screenshot with a description and download link.

I don't have Flight Simulator, but the .zip file with the add-on code
and files has an extensive browser-based user guide with lots of graphics
and discussion of the Mark IX and aviation celestial navigation. It's
pretty slick and worth taking a look at...
