I tried golden syrup but had the same problems you mentioned. I now use cooking oil. It is slightly more viscous than water but settles down quickly when disturbed. Bubbles are not a problem - if any form they can be easily removed. The main reason I switched from water to cooking oil is that with the former I was continually wiping condensation from the glass.
Cooking oil is better than engine oil because it is much easier to clean up spills.
