We use azimuths (primarily from the sun or Polaris) or we use ranges, or we use the Franklin technique to determine gyro error.
One way that is not on my approved method list, but is in common practice is to take the heading of the ship at a pier and comparing it to a line parallel to the dock. This can be off several degrees but is an easy way out.
