Under the assumption that you want to keep your mirrors in Australia, you might want to try
My search criteria was "Australia services mirror resilver". Absolutely anyone who can resilver a front surface telescope mirror can resilver a back surface sextant mirror.
I'm in the US, but as I recall, I shipped mine to the UK. They are small and light, so shipping costs are really minor. If you would like to use the same folks I did, let me know, as I will have to dig out the decade plus old information.
Before you disassemble your sextant, I would strongly suggest seeing if Bill Morris covers your model. sextantbook.com is a great starting point.

This is the first time I have had to go into resilvering or mirror replacement. New country for me and have been doing some reading. Any information would and is appreciated. A couple of my other sextants will get the mirror treatment if I make a success of this poor battered old Tamaya.
I am also interested as to how one can determine the age or year of manufacture of a Tamaya if anyone knows.
