If you have a calculator or other device like that can do a good parabolic fit, then you don't need the paper-folding. But if your calculator has gone missing, then it might be useful. A nice aspect of a calculator parabolic fit is that you can experiment with noise in your sights. Try tossing a coin for each sight and if it's heads, add 0.5' to your original sight. If tails, subtract. You can experiment and see just how much that axis of symmetry that determines the time of local noon is shifted by moderate amounts of error in the individual sights and under what conditions.
