I think that there might even be an app for doing that.
The iPhone and iPad have 3 axis accelerometers and 3 axis gyroscopes capable of recording this data, in likely the resolution that you need. A quick search suggests Inertial Logger, for 99 cents, might do the job nicely.
So now all you need are a few friends on boats with iPhones, willing to record a few minutes under different sea conditions.
I wonder if you contacted a few oceanographic research institutions, you might find someone who has done just that while out on research expeditions.
