You can still buy a genuine celestial globe on e-bay (Soviets and East Germans made them until 1990-s). Here is an example:

Gluing sheets of paper on a sphere will not give you a nice globe, unless the sheets are really small, in which case it will be difficult to glue all of them precisely. I think a better idea is to paint the stars and constellation directly on the surface of a ball.
