Mark,
I'm glad you mentioned some of those elements of the classes that you liked. Teaching celestial navigation, like any somewhat technical subject with a diverse audience, is best done by throwing out as many distinct ways of explaining things as possible and with any luck something will stick for each participant.
Since you mentioned it, I think I'll expand on that "latitude by noon sun" system in another post.
