Mark,
I use an old cell phone. My old phone has a stopwatch with 20 lap timers. I start the watch on the hour using WWV from inside my house. Then when I do my sight I hit Lap, write down the sextant reading and take another sight. Four sights on three stars , quick and easy. Then I go inside, record the times next to the sight numbers and then do my math.
I think this would work on a boat if you put the phone in a zip lock bag.
