You might keep in mind that the Vendee Globe sailors will be sailing over/ through/ near Point Nemo. Point Nemo, located at 48˚52.6'S, 123˚23.6 W, is the location on earth that is the furthest away from land. This distance to the nearest land is 2,688 kms or 1,451 nm. The International Space Station is closer to land as it orbits only 400 km above the earth.
It takes a jury -rigged Imoca sailboat eight days to reach French Polynesia from this point. Water-based SAR teams would take longer.
This point is so far away from land that its waters are a sort of biological desert (far from run off from continents, etc.). Space agencies regularly program their space debris to fall there to avoid collisions and damages.

I believe that the Ice Exclusion Zone really is determined by the current and predicted future movements of ice.

Perhaps I am going off at a tangent, but, Frank, your mention of ETOPS reminded me of the current Vendee Globe race (single handed non-stop around the world on very high-speed 60 foot/18.3 meter racing yachts).

The race features an ice exclusion zone well north of Antarctica, below which (or above which if thinking in terms of southern latitude) the boats must not venture.  In places the zone moves northwards, not because the ice is expected to be further north, but because of the need to be within some pre-determined acceptable reach of emergency services should a boat/skipper get into strife.

An example of the northward shift is beneath the Great Australian Bight.  See below: source - vendeeglobe.org
